At the heart of this UNESCO milestone lies the concept of “Cucina Povera” (literally “peasant cooking”). Far from being a cuisine of lack, it is a cuisine of extraordinary ingenuity. As the renowned food historian Massimo Montanari—a key figure in defining the cultural value of our food—often emphasizes, Italian identity is found in a mosaico of local traditions.
